What is the refresh rate of Shaw's HD cable signal? I'm trying to determine if its worthwhile to buy a 120 hz TV instead of 60 hz since I watch a lot of sports.

Good question, but there is much more about "picture quality" than the Hertz rate.
I recommend that you go to a "big-box" store, such as BestBuy, and do a side-by-side comparison of different TVs, with different size of screens, and also research the capabilities of the video-processor inside the TV, e.g., if/how it "interpolates" between pixels fed to it by Shaw (or Telus), and other "performance" measurements. PIck the one that you judge to be "best". Ask about a "7-day-no-questions-asked" return policy, should it look different in your man-cave than it does in a brightly-lit retail store.
Also keep in mind the following signal formats from the broadcaster itself
ABC - 720p
CBS - 1080i
NBC - 1080i
FOX - 720p
CBC - 720p
CTV - 1080i
Global - 1080i (Not much sports programme's other than some PGA Golf)
TSN - 1080i
Sportsnet - 1080i
Depending on which Shaw STB you receive, the STB might upscale the 720p signal to 1080i if not configured correctly through the STB
