Whatever service you are connecting to, will normally have a 'name' that name can be used to find the IP if you need it,
Basically, ask your VPN provider
The server will have a multipart name; something like vpn.shaw.ca (note this one is fictitious). Assuming you're on Windows, open a command prompt window and type: nslookup vpn.shaw.ca (substituting the actual server name for vpn.shaw.ca). nslookup will respond with something like:
