Exchange email, how to retain email on some devices when deleted

Hi.  I recently changed our shawmail from POP to Exchange.  I like it because when I delete an email on my iPhone it disappears from my Macbook/iPad etc (I'm assuming this is a consequence of the move to Exchange).  The problem is my email account is shared with my wife, so if I want an email that is for her off my phone and delete it, it disappears from her phone too.  Any way to change a setting on one of our devices to prevent this?  Or do I just put her phone back on the POP server so it's separate?
