I have just recently switched from using the POP server to the EXCHANGE server on my iphone 5 and now my phone only stores approx 15 emails at a time.

When you set up an email account using Exchange setting, by default it will sync only the emails received within the last week from the Webmail server. You can increase this limit to 1 Month as follows:
1) Go into Settings in your iPhone/iPad
2) Tap Mail, Contacts, Calendars
3) Tap on your Exchange account
4) Tap Mail Days to Sync and select 1 Month
Note: there is a No Limit option here as well but this will not work at this time, the maximum Mail Days to Sync supported is 1 Month.

Only being able to access 30 days or email is a significant problem for me. I thought a work arround was posted to make use of the 'no limit' option but I can not find is.
I would apprecate anyones help as this is very frustrating. I do find it interesting, however, that sent items seem not bound by the limit.
We removed that workaround because unfortunately it doesn't work since the release of iOS7.
We've very recently started supporting IMAP as a third option to POP and Exchange with Activesync and you may want to consider changing to these settings if the 30 day maximum sync limit bothers you. IMAP is very similar to Exchange in that it syncs emails from the server but there shouldn't be any limitation on the days synced to your device.
