I have ethernet running everywhere in my house but cable only comes in to one location. Can the gateway connect to the portals over a gigabit ethernet network?
Yes, there is a way that works, but is very not supported by Shaw, and may stop working after a firmware update (firmware update could disable the ethernet on the Portals)
If you put a MoCA bridge on the RF Out on the Gateway, it will convert the RF signal to ethernet, and as long as you have a seperate switch for your portals, you can connect the ethernet to your Portals for signal input.
The simple answer is no.
As kevinds mentioned there is 3rd party hardware out there which would allow you to convert coax to Ethernet but is not something Shaw supports and could be interrupted by updates.
I have heard customers with networked homes who are doing HDMI over Ethernet. Again this isn't supported but from my understanding is less likely to be affected by software updates.
