I have a 3510 pvr. I was watching a recording and at 2:55 it froze then the pvr turned off on its own and went through the re-booting process. Why did this happen? I live in the Lower Mainland of BC.

Very sorry to hear that! The unit shouldn't be rebooting on it's own like that. Has this happened often in the past? If so, there may be an issue with the unit itself and we'd have to take a closer look. If this was more of a one-off occurrence, it may have just locked up and needed to restart (similar to a computer getting a BSOD).
Are you able to try recreating the issue? Going to the end of that recording again and let us know if it reboots again?
It has never happened before.
I "re-wound" and watched the whole recording and it was fine. The only thing that has been happening lately is that 3 different recordings didn't record over the weekend and on Monday.

Your recordings though...that's a bit unfortunate Series recordings or single recordings?
Both series and one-time only recordings. Unfortunately there is no History on the menu of the 3510 to check why something didn't record.
