Why are the remote (green light) and data (yellow light) on our PVR not lit up ?? I can see the red light when recording, but not the others. on our old PVR I could see the channels I am looking at, I miss that too.

Under normal circumstances I don't think the green or yellow lights are active. I did a bit of digging and it looks like the green light just indicates that it is using an RF remote instead of IR. This shouldn't have any impact on your services, though.
The default display is the time on this particular model. It doesn't look like this is an option you can modify, but you can learn more about the available settings options here: Shaw Gateway - Settings
