I went to change the font size in the guide on one set and after finishing in the menu, the box went to reboot. Currently we're sitting at about ten minutes on the APP cycle. is this normal? This box has to be running.
Generally rebooting won't take more than 5 minutes at the most. However, there is an issue that we're tracking at the moment which can cause some cable boxes to get stuck on APP, like you're seeing. The latest though is that this might be resolved now. Can you check again? Or if it's still stuck, try removing the power again for 30 seconds.

Okay, power cycled and went through the sequence... stopped on APP again.. Been about ten minutes now.
